Independence Day
Happy Fourth of July everyone!
I made a paleo chocolate cake and took it to work on Friday to celebrate the Fourth of July. The cake was basically coconut flour, tapioca flour, cocoa powder, and applesauce. with a cream cheese frosting with some berries on top.
Everyone thought it was pretty good. They asked me if this is traditional American cake for Independence Day. I just smiled and said "yeah, basically." I'm pretty sure I'm screwing up their perception of traditional American food. I love it!
Some of our American church friends had a July 4th BBQ at their house so I went and socialized. It wasn't exactly like in Des Moines but it was close enough. I didn't mean everyone, but there were people from:
- America (by far the majority)
- UK
- Ecuador
- Mexico
- Venezuela
- Spain
- Poland
I could tell we were in Spain because instead of beer, everyone was drinking tinto de verano, and there was a dish of paella next to the burgers and hotdogs.
I didn't stay for the fireworks because it doesn't get really dark until closer to 11 and Olive would be crazy when I got home (she was crazy when I got home at 10:30, anyway).
